- 1 can chickpeas, drained and rinsed (400 g)
- 1 ripe avocado, pitted
- 1 handful fresh basil leaves
- 1 small bunch flat-leaf parsley
- 2 tablespoons tahini
- 1 lemon, juiced
- 1 clove garlic
- 2 tablespoons olive oil
- salt and pepper, to taste

Preparation
- Drain and rinse the chickpeas, then set a few aside for the garnish.
- Add the chickpeas, garlic and tahini to a food processor and blend to a coarse paste.
- Scoop in the avocado flesh along with the basil and parsley and blend again until smooth.
- Pour in the lemon juice and olive oil with the motor running, then season with salt and pepper.
- Loosen with a tablespoon of cold water at a time until the hummus is silky.
- Spoon into a shallow bowl, swirl the surface and finish with the reserved chickpeas and a drizzle of oil.
- Serve straight away with warm flatbread or crisp vegetable sticks.
