Are the measurements metric or imperial?
Both. Every ingredient list gives the working unit first and the conversion in brackets, so you can cook from either without doing the arithmetic yourself.
Can I substitute an ingredient?
Usually. Where a swap changes the method we say so in the step itself rather than in a footnote, and where it does not we leave you to it.
How accurate is the nutrition information?
It is calculated per serving from the ingredient list and rounded. Treat it as a good guide rather than a clinical figure, especially where you have changed quantities.
How long do leftovers keep?
Cooked dishes keep three days refrigerated in a sealed container. Anything with raw fish or soft cheese is best eaten the same day.
Can I print a recipe?
Yes: the print button on every recipe lays out the ingredients and steps on their own, without the photographs or navigation.
Do you test every recipe?
Every recipe is cooked at least twice, in a domestic oven, by the person credited on the page. If it needs a third pass before it works, it gets one.
How often do you publish?
New recipes go up weekly and the journal is updated whenever there is something worth saying about an ingredient or a technique.
Can I share a recipe?
Please do. Use the share buttons on the recipe, or link to it directly: just do not republish the full method as your own.
