One wine, followed through its year in oak. We draw straight from three barrels of the same parcel, chosen for different forests and different toasts, and you taste what the wood is actually doing before the blend hides it.
Straight from the thief
Nothing in this tasting is finished. The wine is cloudy, the tannin is loud and the acidity has not settled. That is the point: it is the only way to understand why the bottled wine tastes the way it does.
Good to know
The barrel room sits at fourteen degrees and stays there. Perfume and aftershave carry badly in a cellar, so we ask guests to skip both. The session ends with a glass of the finished wine upstairs.
