Older bottlings brought up from the library and opened beside the wine they grew into. The 2003 and the 2011 pour next to the current release, so the difference twenty years makes is a thing you taste rather than a thing we describe.
What comes out of the cellar
Three vintages of Brinche Adamado as the spine of the tasting, plus whatever else the cellar master decides is ready that month. Older bottles are decanted an hour before you arrive.
Good to know
Library stock is finite, so this one is booked by the seat and released a month at a time. Six chairs, one table, and no rush. Allow ninety minutes and do not plan to drive afterwards.
