The pans have been worked since 1826 and the method has not changed: flood, wait, rake, dry, carry. Six families remain, and the youngest of them is fifty-four.
We filmed one full harvest cycle over nine days, mostly at first light, when the crust is thin enough to lift in sheets and the whole flat turns pink.
