Thick-cut sourdough, cured ham and a mountain of gruyere, griddled in butter until the cheese runs over the edges. We finish it under the grill so the top blisters, then serve it with a handful of dressed leaves.
It is the sandwich our regulars order without looking at the board, and the one we make most often on a rainy afternoon.
